Apple Hand Pies



Total time: 1 hour 45 minutes

Yields: 10 – 12 pies

Level: Intermediate



1 1/4 cups flour

1/2 cup cold and cubed butter

5 – 6 tablespoons ice water

1 teaspoon baking powder

1 teaspoon salt

5 tablespoons sugar

a pinch of cinnamon

1 egg


I green apple

1/2 cup white granulated sugar

1 teaspoon cornstarch

4 teaspoons cinnamon

Juice from 1/2 a lime

1 teaspoon nutmeg


In a food processor, add the flour, salt, cubed butter, baking powder, sugar and cinnamon. Pulse together until grainy like sand. Add in the ice water one teaspoon at a time until your dough forms into a ball. While making your filling place dough in the freezer.

Mince the apple into cubes about half a centimeter in width, length and hight. In a bowl add the apple cubes, nutmeg, sugar and cinnamon and mix together. In a very small bowl combine your cornstarch and your lime juice and then throw it into the apple mixture.

 Take your dough out of the freezer. Flour your surface and your rolling pin. Start rolling out your dough into a rectangles with a length of 4 inches and a width of 3 inches.

Take two rectangles and place them on a cutting board. Place about 1 1/2 tablespoons of apples in the middle of one of them. Place the other rectangle on top of it and seal with a fork. Continue this step for how ever much dough you have, then put them on a baking sheet. Brush them in an egg wash. Place them in the oven for 30 to 40 minutes.

When plating sprinkle with cinnamon and or confectioners sugar.
