Lemon Strawberry Cake

Every Friday at my school there is a food sale. I was asked to put something together in a matter of three days. The first day I baked the Vanilla Cakes and chilled them. The second day I gathered all the materials I needed to make the fillings. On the third day I made the lemon butter cream,  then lastly the Strawberry Cream. Once I had all these components it was then time to put everything together, which in my opinion was the hardest part. I got many compliments at the end of the day and hopefully if you try this you will like it too.

3 thin vanilla cake layers

Strawberry Cream

1 1/2 whipping cream

1/2 cup lemon juice

10 Strawberries

3 table spoons sugar

Lemon Buttercream

Zest of 2 lemons

3 tablespoons lemon juice

3 cups icing sugar

1 cup butter

1/2 teaspoon vanilla extract


Strawberry Cream

In a blender, blend together your lemon juice and all of your strawberries. Blend this to make a smooth texture. In a large bowl whip the whipping cream with sugar until it forms stiff peaks. Fold the strawberries into the whipped cream. Let this set for at least 2 hours.

Lemon Buttercream

In a stand mixer whisk the butter until it changes color. Toss in your icing sugar 1 cup at a time. At This time add in your zest, lemon juice and your vanilla extract and mix.


Level off all three of your cakes. Place one on a turn table with about a teaspoon of icing sugar underneath to create  friction. Take a piping bag and fill it with your Lemon Buttercream. Pipe a thick line around the perimeter of the cake. Spoon in your Strawberry Cream in the circle you created before. Repeat this step one more time, then finish it off by adding the last layer of cake on top. You can garnish this with strawberries if you please.
